Content Inside: Selection of Welsh Beef Recipes CARIBBEAN BEEF KEBABS with pineapple and mint salsa Serves: Cooking time: 4 Approximately 30 minutes INGREDIENTS: 450g (1lb) lean beef rump steak, cut into cubes 30ml (2tbsp) oil 10ml (1dsp) Jamaican jerk seasoning 1 Can (approx. 432g) pineapple rings (or fresh pineapple slices) 15ml (1tbsp) brown sugar 15ml (1tbsp) olive oil 30ml (2tbsp) fresh mint, finely chopped 1 pepper, deseeded and cut into cubes 4 small tomatoes 4 bay leaves (optional) METHOD: In a small bowl mix oil with Jamaican jerk seasoning and brush over beef steak cubes. Meanwhile make the salsa: in a small bowl mix together the pineapple, chopped, olive oil and fresh mint. Thread cubes of beef onto skewers (pre-soak to avoid burning if using bamboo skewers) with pepper, tomato, pineapple and bay leaves. Cook kebabs on a preheated barbecue or grill for approximately 10-12 minutes. Serve the Caribbean kebabs with pineapple and mint salsa.  Selection of Welsh Beef
